Where does it come from
This sparkling wine originates in Trentino-Alto Adige, in the Val di Cembra, within the Trento denomination. The vines take root in a loamy-sandy and loose soil, rich in porphyry, a geological element that imparts great precision of flavour and remarkable longevity. Cultivation follows the simple Trentino pergola and Guyot systems.
How is it produced
Production begins with the manual harvesting of the grapes, followed by a gentle pressing. After static decantation, the must ferments at a controlled temperature in steel and matures on the fine lees for over seven months to define the structure of the blend. With the tirage, refermentation in the bottle begins, as required by the Traditional Method. The sparkling wine matures for 36 months on the lees, developing perfect harmony before disgorgement, and is completed with a Brut dosage that respects its original balance.
