What kind of wine it is
Rupe Re Vendemmia Tardiva is a sweet passito wine by Cavit, an expression of the Trentino Superiore region. This wine is created from a careful blend of white grapes including Nosiola, Riesling, Sauvignon Blanc, Gewürztraminer, Chardonnay and Incrocio Manzoni. With its bright, intense golden yellow colour, it offers clear aromas of dried apricot, preserved peach, honey and candyfloss. On the palate, the sip is enveloping and rich in aromas, balancing sweetness with a fresh and persistent finish, ideal for pairing with blue cheeses and refined tastings of foie gras.
Where it comes from
The grapes come from the hilly areas of Trentino, particularly from the Valle dei Laghi, Vallagarina and the Adige Valley. The vineyards benefit from south and south-west exposures in areas that are constantly ventilated. The stony soils create the ideal environment for optimal ripening. The drying process takes place partly on the vine, a process encouraged by the development of Botrytis cinerea in its noble form, which naturally dries the berries, promoting a valuable concentration of sugars and aromatic substances that define the wine's profile.
How it is produced
The production process involves manual harvesting and selection of the botrytised bunches in late autumn, to ensure the fruit's maximum expression. In the winery, extraction is carried out through a gentle pressing to obtain a dense must. The subsequent fermentation and ageing stages take place in small stainless steel tanks, a deliberate choice to preserve the purity of the original aromas. The cycle is completed with a resting period of eight months before release, which helps to stabilise its flavour profile.

The image that best represents Cavit, a large co-operative composed of a large number of small wineries, is that of the vine that produces healthy grapes only if the roots and the other parts of the plant all perform their roles properly.
Created in 1950 to meet the needs of the winegrowers in the area to offer the very best quality and market their wines in a modern way, today Cavit represents over 4,500 winegrowers who are members of 11 cellars and 65% of the wine production in Trentino (around 5,700 ha). Cavit harvests, examines and selects its raw materials from the best produce of the cooperative member cellars, which undergoes strict controls at every stage: from refining to bottling.
Cavit today is one of the major companies in the wine business, operating successfully at national and international level.The headquarters in Ravina, where the production and logistics facilities are also located, house the Wine Cellar, Sparkling Wine Cellar and Wine Shop. Cavit also owns Maso Toresella, used for corporate entertaining, on Lake Toblino.
