What kind of wine is it

Cavallotto Barolo Riserva Vignolo is an organic still red wine that expresses the purest character of Nebbiolo. To the eye, it reveals an intense and bright garnet colour, which anticipates a complex bouquet of stewed berries, roots, spices, roses and violets, accompanied by delicate menthol and mineral notes. On the palate, it stands out for its harmony and savouriness, supported by a noble tannic structure and a fleshy, persistent fruit. This Barolo Riserva boasts an excellent structure, ideal for pairing with red meats, game, mature cheeses or more daring combinations with lean fish, shellfish and dark chocolate.

Where does it come from

The grapes come from Castiglione Falletto, in Piedmont, within the historic Bricco Boschis vineyards. The Cavallotto winery has been cultivating these lands since 1928, respecting the natural vocation of the soil. The favourable south-west exposure ensures consistent ripening of the grapes, shaping the rigorous and profound profile of this Nebbiolo. The single plot origin, managed according to the principles of organic farming, imparts the authentic pedoclimatic imprint of the area to the wine and guarantees a clear expressive precision.

How is it produced

Vinification begins with total destemming and fermentation triggered by indigenous yeasts in horizontal tanks at controlled temperature. Extraction continues with a semi-submerged cap maceration lasting several weeks, essential for developing the correct chromatic and structural depth. In spring, the wine completes malolactic fermentation in cement vats. Prolonged ageing in Slavonian oak barrels polishes the tannic profile and blends the fragrances, resulting in a cohesive, stable taste with remarkable ageing potential.

At the gates of Castiglione Falletto, in the heart of the Barolo Zone, on the slopes of the Bricco Boschis, one finds the Cavallotto Winery, which lies on 25 hectares of land. Since 1928, the Cavallotto family has owned the estate Tenuta Bricco Boschis. In 1946, they were the first cultivators in Castiglione Falletto to vinify all of their estate’s fruit. In 1948 they released the first bottling of their own BAROLO wine, with the label and registered trademark of Cavallotto.

Today the children of Olivio – Laura, Giuseppe and Alfio, the 4th generation working the family farm – continue to exclusively vinify the grapes produced in their estate vineyards into DOC and DOCG wines: Barolo, Dolcetto d’Alba, Barbera d’Alba, Langhe Nebbiolo, Langhe Freisa, Langhe "Grign" made from Grignolino grapes, Langhe Chardonnay and "Pinner" made from Pinot Nero grapes.
