How it is produced
Vinification begins with fermentation in truncated conical stainless steel vats at a controlled temperature. During this phase, lasting around twenty days, targeted délestage and pumping over operations are alternated to maximise extraction and stabilise the colour. Maturation continues in French oak barrels, using both new and second-use wood, for a period ranging from eighteen to twenty months. This stage imparts solidity and integrates the natural toasted notes. The process concludes with a lengthy final ageing of about two years, essential for harmonising every gustatory and tactile component.
