Muffato della Sala from Castello della Sala is a refined sweet white wine with Indicazione Geografica Tipica from Umbria, the result of a carefully managed late harvest. Its aromatic profile is born from a skilful blend of Sauvignon Blanc, Grechetto, Traminer, Sémillon, Riesling and Drupeggio grapes. On the nose, it offers a deep bouquet, characterised by notes of ripe tropical fruit, dried apricot, saffron and citrus marmalade. On the palate, this botrytised wine is enveloping and rounded: the natural sweetness harmoniously merges with lively freshness and subtle saline notes. It is an excellent meditation wine, perfect for pairing with blue cheeses, caramelised duck or dry pastries.
Where it comes from
The grapes grow in the vineyards of Castello della Sala in Umbria, located near Orvieto, in an area between the Paglia river and Monte Nibbio. Here, the vines draw nourishment from clay and limestone soils rich in marine fossils, which give the wine a distinctive character. The local climate is fundamental: hot summers with marked temperature variations give way to an autumn marked by thick morning mists. This particular climatic condition, combined with the correct sun exposure, encourages the development of Botrytis cinerea, the noble rot that concentrates sugars and aromas within the grapes.
How it is produced
Production involves a rigorous manual harvest carried out in several stages between October and November, in order to select only the bunches affected by noble rot. In the winery, after a further selection, the grapes undergo gentle crushing without destemming, followed by soft pressing. Fermentation takes place in stainless steel tanks at a controlled temperature. The wine then matures in French oak barrels from the Allier and Tronçais forests for about six months. Afterwards, the final blend is created, which completes its ageing process in steel to harmonise structure, smoothness and persistence on the palate.

The estate’s 229 hectares (566 acres) of vineyards are located at an altitude of 220 - 470 meters above sea level (722-1542 feet) and are planted with traditional varieties such as Procanico and Grechetto but also with Chardonnay, Sauvignon Blanc, Sèmillon, Pinot Blanc, Viognier and a small quantity of Traminer and Riesling.
The region is exceptional for producing white varieties with one exception, Pinot Noir, that has found ideal conditions in this terroir to best express its full potential. The vines grow in clay and calcareous based soils, rich in fossil shells, and they are well exposed to the rising of the sun with an excellent difference of temperature between day and night.
