Franciacorta Dosage Zero from Castello Bonomi is a rigorous and elegant expression of the Traditional Method, born from the harmonious union of Chardonnay and Pinot Noir. To the eye, it displays a brilliant straw yellow colour, crossed by a fine and persistent perlage that heralds an enveloping tasting experience. The bouquet opens with aromas of white fruits and citrus, enriched by delicate vegetal nuances, hints of vanilla, toasted almonds, and the unmistakable note of freshly baked bread crust. On the palate, the creamy effervescence merges with a silky texture, offering a balanced structure that finishes with a dry and precise ending.

Where it comes from

This sparkling wine comes to life on the slopes of Monte Orfano, in the area of Coccaglio, where Castello Bonomi cultivates its vineyards within the hilly landscape of Franciacorta. The vines sink their roots into limestone soils, benefiting from a unique microclimate that imparts pronounced finesse and a clear, deep mineral character to the wine. The vineyard management involves high planting density and yields aimed at ensuring optimal concentration of the grape clusters. The winery boasts extensive underground spaces dedicated to ageing, allowing for a long and silent rest on the lees.

How it is produced

The process begins with manual harvesting and gentle pressing, designed to extract only the free-run must. The two varieties follow separate paths before the creation of the blend: the Pinot Noir matures in temperature-controlled steel tanks to preserve its freshness, while the Chardonnay ferments and rests in small oak barrels. The second fermentation in the bottle, according to the principles of the Traditional Method, lasts for over fifty months, a prolonged period that enhances the wine’s aromatic and flavour complexity. The absence of dosage syrup defines a dry flavour profile, completed by further ageing in glass to achieve a clear harmony.

The name Franciacorta has its roots in the Middle Ages, when these lands were entrusted to small communities of Benedictine monks, exempted (francae) by taxes (curtes), so that they were reclaimed and cultivated.

Here the first wine was born, in the 13th century, four hundred years before that in Champagne. A land of abbeys and priories, this moraine area bounded by Monte Orfano, Monte Alto and the hills of Lake Iseo, knows had its first major development in wine production in the second half of 800, when the historian Gabriele Rosa defined it as a land of "excellent black and white wines". Castello Bonomi lies on the slopes of Monte Orfano, a jewel in a marvelous casket, the only Chateau of Franciacorta. The Castello Bonomi estate takes its name from the original Art Nouveau building designed by architect Antonio Tagliaferri at the end of 800.

The rennovation of the historic cellars combined with the creation of new underground spaces has provided the Castello Bonomi estate with cellars that total an area of ​​more than 1500 square meters.

The annual production of the company is about 150 thousand bottles: 100 thousand of Franciacorta CruPerdu, Satèn, Rosé, Millesimato, Cuvée Lucrezia and Lucrezia Etichetta Nera, Cuvée del Laureato; the rest divided between the Curtefranca: Solicano, Conte Foscari and Cordelio.
