Where it comes from
The grapes for this passito grow in the heart of Montalcino, within the evocative landscape of Tuscany. This specific geological composition, combined with low yields, encourages the ripening of rich and concentrated fruit. How it is produced
Production begins with the dehydration of the bunches directly on the vine, a fundamental step in defining the character of the Late Harvest. After harvesting, fermentation takes place in stainless steel tanks at a controlled temperature to preserve the primary aromas, while a small portion of the must ferments in French oak barrels. The subsequent ageing process involves maturation divided between wood and steel.
