What kind of wine is it

Governo di Castellare is a red wine produced in Tuscany by Castellare di Castellina. This blend of Sangiovese, Canaiolo Nero and Malvasia Nera stands out for its smooth and lively palate. Characterised by a pale ruby red colour, it reveals a delicate floral bouquet on the nose. Its remarkable drinkability makes it very easy to enjoy and pleasant, ideal even when served slightly chilled. The use of the ancient Governo Method enriches the aromatic profile, while preserving its innate agility and ease of drinking.

Where does it come from

The grapes come from the hills of Castellina in Chianti, situated at an altitude between 350 and 400 metres. The vineyards, trained using the Guyot system, take root in calcareous and clay soils. This particular geological composition, combined with a favourable microclimate, ensures the perfect ripening of the grapes. The winery operates with full respect for the ecosystem, excluding the use of chemical fertilisers and protecting local wildlife: agronomic choices aimed at producing a wine with extremely clear aromas.

How is it produced

Manual harvesting ensures careful and rigorous selection of the grapes. Vinification takes place in steel tanks, where the must receives the addition of dried grapes during alcoholic fermentation. At the end of the malolactic phase, the wine undergoes maturation in concrete for four months, an ideal step to preserve its natural freshness. This is followed by a final rest in the bottle before release. The result is a dynamic red, best enjoyed at a recommended serving temperature of 14-16 degrees.

Castellare di Castellina was born of the union of four estates (Castellare, Caselle, San Niccolò and Le Case) on the initiative of Paolo Panerai, with the aim of producing wine of the best possible quality. This is a story that demonstrates how tradition, also in the installations, and innovation can draw the best out of the land, showing the younger generations how the hard work and lives of the Mezzadri - the people who once ran the estates as neither owners nor labourers - has been fundamental in shaping the extraordinary landscape of the Chianti.

The red wine I Sodi di S.Niccolò Toscana IGT, vintage 2021, from the Castellare di Castellina winery was rated 99 Falstaff points in 2025 by Othmar Kiem and Simon Staffler. It is a wine made from Sangiovese and Malvasia Nera grapes from the Chianti Classico region of Italy.
