What kind of wine it is
Coniale by Castellare di Castellina is a still red wine from Tuscany, a pure expression of the varietal character of Cabernet Sauvignon. It stands out for its medium-bodied profile and a fine, silky tannic structure, where elegance prevails over structural power. On the nose, it releases deep aromas of blackberry, blackcurrant and blueberry, intertwined with delicate floral notes of violet and dog rose. The bouquet is enriched by hints of sweet spices, cocoa, cedar and roasted coffee, while on the palate it is warm and velvety, offering a harmonious taste and a pleasant persistence.
Where it comes from
The grapes are grown in Castellina in Chianti, in the heart of the province of Siena, from vineyards located at an altitude of 350-400 metres above sea level. This position ensures optimal temperature variations to preserve the freshness and aromatic definition of the grapes. The terroir is characterised by stony soil and rocky components, essential elements to ensure ideal drainage and promote balanced ripening. In this environment, the grape variety blends harmoniously with the territorial identity of Tuscany.
How it is produced
The manual harvest takes place towards the end of September, with a rigorous selection of bunches from vines trained using the reversed Guyot method. In the cellar, fermentation in stainless steel is followed by malolactic fermentation, necessary to soften the acidity and give balance to the structure. Maturation continues for eighteen months in French oak barrels, half of which are new, and is completed with a final ageing in the cellar. The deep ruby colour introduces a dense and enveloping sip, which ends with a long, fruity finish, enriched by elegant peppery nuances.
