Castellare di Castellina Chianti Classico Riserva is a harmonious still red Tuscan wine. This blend of Sangiovese and Canaiolo displays a ruby red colour with elegant garnet highlights. The bouquet releases aromas of red fruit, currant and liquorice, dominated by an intense hint of violet. On the palate, it is dry and balanced, characterised by velvety tannins and a pleasant freshness. A sip with long persistence, perfect for accompanying roasted red meats, game and mature cheeses.
Where it comes from
The grapes are grown in Castellina in Chianti, in the heart of Chianti Classico. The vineyards rest on limestone soil at an altitude between 350 and 400 metres above sea level. The double Guyot training system and low yields ensure clusters of excellent ripeness. These precise pedoclimatic conditions enhance the true identity of the territory, giving the wine clear aromas, vibrant acidity and a structure ideal for supporting significant ageing potential.
How it is produced
After the harvest and careful selection of the grapes, fermentation in stainless steel preserves the clarity of the fruit. Maturation continues for fifteen months in French oak barrels, enriching the flavour profile with softness. A further bottle ageing of another fifteen months defines the perfect integration between structure and tannin. By using only native varieties, a dry and persistent profile is achieved, best appreciated after an hour of decanting.
