What kind of wine it is
Cascina Valle Asinari Barbera d’Asti Superiore is an organic still red wine from Piedmont, made exclusively from Barbera grapes. In the glass, it displays a deep ruby red colour with bright violet highlights. The aromatic bouquet is intense, dominated by notes of red fruit, plum and blueberry jam, enriched with balsamic hints and elegant spices. On the palate, it reveals a warm and complex structure, skilfully balanced by a pronounced acidity that ensures a pleasant gustatory tension. An enveloping style, capable of evolving in the bottle for up to a decade.
Where it comes from
The grapes come from San Marzano Oliveto, in the province of Asti, from hillside vineyards located in the highest part of the estate. Thanks to an ideal south and south-east exposure and altitudes close to four hundred metres, the bunches achieve a slow and complete ripening. The heterogeneous soils, characterised by an alternation of sands, clays and limestone rocks, impart a clear savoury identity to the wine. The influence of the continental climate, marked by cold winters and rainfall concentrated in spring, helps to shape deep aromas and excellent longevity.
How it is produced
The production process begins with a spontaneous fermentation of about twelve days, triggered by indigenous yeasts in concrete vats. Malolactic fermentation is also completed in the same material. Maturation then continues for a year in large French and Slavonian oak barrels, finishing with a further three months of rest in the bottle. This careful process in the cellar shapes a smooth sip, preserving the typical freshness of the grape variety. The finish, long and persistent, is supported by a delicate tannin and pleasant mineral notes.
