How it is produced
The manual harvest takes place in October and involves an initial selection of the grape clusters on the sorting table. After mechanical destemming, the selected berries are transferred to the vats by gravity to begin vinification. The must undergoes a fermentation and maceration phase lasting twenty-one days, designed to extract colour and structural components. The long ageing process takes place in oak barrels for forty-five months, a fundamental stage that consolidates the tannic framework and amplifies the wine’s persistence on the palate.
