Casalforte Valpolicella Ripasso is a red wine from Veneto that faithfully expresses the identity of Riondo. It is made from a blend of Corvina, Corvinone and Rondinella grapes. On the nose, it develops an intense bouquet with aromas of cherry and red fruits, enriched by deep hints of dried fruit, dark chocolate and liquorice. Where it comes from

This red originates in Valpolicella Ripasso, with vineyards located on the hills of the Lessini Mountains, between the area north of Verona and the eastern shore of Lake Garda. The well-drained limestone soils and mild climate, tempered by Mediterranean influences, favour ideal ripening of the grapes. The interaction between this terroir and the hilltop microclimate results in a marked aromatic concentration and a solid structure, offering a dry sip, with clear fruit and excellent persistence on the palate.

How it is produced

The process is based on the Ripasso technique, which involves refermenting the wine in contact with the Amarone pomace to enrich its body and extract levels. During vinification, the Ganimede system manages the continuous mixing of must and skins, optimising phenolic extraction. Maturation lasts about twelve months, divided between stainless steel and oak barrels. This careful ageing in wood smooths the tannic texture, ensuring great stability and a deep, well-balanced sensory profile.
