General Dallemagne Extra Brut is a prestigious Traditional Method sparkling wine produced by Cantine Monfort. This Trento Riserva is crafted from a refined blend of Chardonnay and Pinot Noir. In the glass, it stands out for its bright golden yellow colour, enhanced by a fine and persistent perlage. On the nose, elegant hints of bread crust and warm vanilla notes emerge, perfectly balanced with a delicate citrus nuance. On the palate, it is dry, full and rounded, characterised by a complex balance between natural creaminess and vibrant Alpine freshness.

Where does it come from

This sparkling wine originates in Trentino Alto Adige, among the hills surrounding Trento and Pergine Valsugana. The vineyards, trained using the Guyot system, are located at an altitude between 400 and 600 metres, an ideal position that gives the grapes a defined structure and a pleasant gustatory tension. The soil, composed of clayey porphyry and sand, plays a fundamental role in giving the sip a dry, mineral and harmonious style.

How is it produced

Production involves an initial fermentation in steel, followed by a period of ageing in used barrels on the fine lees until the following spring. True complexity is achieved through 64 months of maturation on the lees, following the rigorous steps of the Traditional Method, a long rest that defines its aromatic depth and the finesse of its bubbles. Ideal with refined starters and fish-based dishes, it also pairs excellently with mature cheeses, making it the perfect choice for the most important occasions.
