What kind of wine it is
Piwi Prinzipi is a sparkling white wine produced in Friuli-Venezia Giulia by Cantina 837, made from the vinification of Solaris grapes. This grape variety gives the glass a straw yellow colour with bright lime-hued reflections, enhanced by a very fine and persistent perlage. On the nose, the bouquet ranges from notes of quince, citrus fruits and chestnut flowers, enriched by hints of meadow grass on a delicately yeasty background. On the palate, it reveals a savoury body that combines freshness and character, finishing with an elegant, almondy aftertaste.
Where it comes from
Production begins in Forni di Sotto, where the vineyards grow at eight hundred and fifty metres above sea level, immersed in a harsh mountain climate. The vines, facing east to west, sink their roots into soils composed of clayey silt, a factor that gives the wine a compact structure and pronounced savouriness. In this unique terroir, viticulture follows sustainable practices, making the most of the grape's natural resistance to minimise interventions in the field. The chosen name is a reference to the concept of beginning and the deep connection with the natural environment.
How it is produced
The grapes are harvested in September, followed by vinification aimed at preserving the integrity of the varietal aromas. The must undergoes fermentation in steel at a controlled temperature, ensuring a clear aromatic profile. This is followed by careful ageing on the lees, a step that gives the wine balance and a pleasant, enveloping sensation on the palate. Served chilled, this white wine elegantly accompanies vegetarian dishes, and also pairs perfectly with cheeses, white meats and small dry pastries.
