Ammonites Dosaggio Zero by Camilucci is a Franciacorta with a fresh and balanced profile, created from a blend featuring Pinot Noir, Pinot Blanc and Chardonnay. This elegant white sparkling wine appears in the glass with a bright golden colour, developing a fine and persistent perlage that precedes clear floral and fruity notes. The prise de mousse is carried out strictly according to the Traditional Method, offering an experience of great character and purity, enhanced by the complete absence of sugar dosage.
Where does it come from
The grapes for this wine come from the areas of Rodengo Saiano, Gussago and Paderno Franciacorta. The vineyards are rooted in ancient morainic hills, a soil that imparts precision and harmony to the organoleptic profile. The vines, with an average age of twenty years, grow at around two hundred metres above sea level and are cultivated using the Guyot system. Careful agronomic management, characterised by high planting density and targeted pruning, ensures balanced yields capable of authentically expressing the territory.
How is it produced
Manual harvesting is followed by gentle whole-bunch pressing. The different varieties ferment separately in stainless steel tanks at controlled temperature, maturing for several months before the final blend is created. The subsequent refermentation in the bottle allows the wine to mature for a long time on the lees, acquiring notable depth. After disgorgement, a further period of rest perfects the balance of flavour. The process preserves excellent total acidity and a solid dry extract, ensuring a clear and persistent sip.

Vinified separately and expertly blended, the base wines mature according to the Traditional Method, resting for 18 months on the lees. The result is an excellent Dosaggio Zero with a fine and persistent perlage, which delights the palate thanks to its pronounced freshness, great balance and purest floral notes.

We are located in the heart of Franciacorta, in a beautiful hilly area, particularly suitable for viticulture, with vineyards in the municipalities of Rodengo Saiano, Ome, Monticelli Brusati and Gussago, a few kilometers away from Lake Iseo and Brescia.
