Camillo Donati's Lambrusco is a still organic red wine with a good structure, which moves away from the classic easy-drinking style to offer a decidedly full-bodied sip. Produced in Emilia-Romagna, it is made from Lambrusco Maestri grapes. On the palate, it expresses an intense character, with considerable ageing potential that makes it ideal for cellaring. It is an all-round meal wine, perfect with cured meats, traditional first courses and mature cheeses. Its structure enhances complex main courses of red meat and pork-based dishes.
Where it comes from
Production takes place in the heart of Emilia, among the hills of Barbiano in the municipality of Felino. The winemaking history of the Camillo Donati family dates back to the last century, with historic vineyards located in Arola. The Lambrusco Maestri, usually appreciated in the plains for its resilience and productivity, reveals a new identity here. Grown on less fertile hillside soils without irrigation, the vine limits its vegetative vigour, ensuring low yields and superior, concentrated quality.
How it is produced
The approach in the vineyard aims to achieve a high aromatic density. The vines are trained using the Guyot system, with severe pruning that leaves few buds per plant. This rigorous management, aided by the dry hillside climate, limits the development of the bunches, concentrating the extracts in the must. The winemaking follows a long-lived and consistent profile, resulting in a wine capable of evolving over time. To fully appreciate its complexity, it is recommended to decant beforehand and serve at a temperature between eighteen and twenty degrees.
History and Curiosities
Since 1930, the Camillo Donati family has been cultivating vineyards in Arola with Lambrusco Maestri. Although widely grown in the lowlands for its high productivity, this grape variety reveals a surprising quality in less fertile soils without irrigation. Thanks to a very strict Guyot pruning (only 7-10 buds per fruiting cane), yields are reduced. This choice results in a structured organic wine with great longevity, capable of offering a full-bodied and deeply Emilian tasting experience.
