Where it comes from
Originating from Bouzy, in the heart of the Champagne region, this wine is crafted by the Camille Saves maison. The grapes come from historic Grand Cru classified vineyards, cultivated according to organic and sustainable principles, with vines over thirty-five years old. The cool chalk cellars house the bottles at a constant temperature of ten degrees, ensuring optimal ageing that enhances the precise aromatic and territorial expression of the terroir.
How it is produced
The bunches are hand-selected at perfect ripeness and undergo a gentle pressing. After cold clarification, the first fermentation takes place without malolactic fermentation, thus preserving a lively natural freshness. The secondary fermentation in the bottle allows the wine to mature on the lees for a period of six to seven years before disgorgement.
