Description
What kind of wine it is
The Quintessenz Cabernet Sauvignon Riserva by Kaltern is a still red wine that elegantly expresses the character of Alto Adige. The result of a carefully crafted blend of Cabernet Sauvignon and Merlot grapes, it presents an intense carmine red colour. The bouquet is enveloping, defined by spicy notes of cinnamon and exotic wood, combined with hints of wild berries, chocolate and liquorice. On the palate, it reveals powerful yet sweet tannins, offering a structured and persistent sip. The long finish is distinguished by pronounced hints of tobacco and liquorice, confirming a complex and well-defined structure.
Where it comes from
The grapes grow on gentle south-east facing slopes, situated between 220 and 260 metres above sea level. This area benefits from a warm lake-influenced microclimate, ideal for the perfect ripening of the grapes. The clay-limestone soil, rich in pebbles, imparts concentration and a distinctive sense of place to the harvest. The vineyards are cultivated using the Guyot system, favouring high planting density and low yields, essential for ensuring a high quality standard. Kaltern’s agricultural approach is geared towards organic and sustainable viticulture, with deep respect for the natural vocation of this territory.
How it is produced
The process begins with fermentation and a prolonged maceration on the skins for four weeks, a crucial step for extracting colour and structure. This is followed by malolactic fermentation, which softens and rounds out the palate. Ageing continues for eighteen months in oak barrels, half of which are new, allowing for a harmonious integration between the fruity component and delicate sweet spice notes. The production cycle concludes with a light final filtration, preserving the intensity and expressive elegance of this wine.
