With an intense ruby red colour, it reveals a bouquet on the nose dominated by cherry, raspberry and small forest fruits. On the palate, this Pinot Noir offers a velvety and sinuous sip, in which the fruity component is interwoven with refined notes of cinnamon and toasted hints, concluding with a persistent and harmonious finish. Its balanced structure pairs perfectly with mature cheeses and intense dishes such as duck à l'orange.
Where it comes from
This wine is born in the territory of Alto Adige, an environment that favours a clear varietal expression. The hillside vineyards, located between 450 and 550 metres above sea level with an eastern exposure, benefit from an ideal microclimate for the development of the aromatic component. The limestone and clay soils of medium texture, rich in sand and debris, provide a solid but never heavy structure. This synergy between climate and geology enhances a measured tannic texture, fully highlighting the identity of Alpine viticulture.
How it is produced
Production begins with the fermentation of the Pinot Noir grapes on the skins at a controlled temperature, followed by a maceration of 8 days, aimed at extracting colour while preserving a fine texture. After malolactic fermentation, the wine matures for 4-5 months in concrete tanks and in large oak barrels, allowing the freshness of the fruit to harmonise with delicate spicy nuances. This meticulous cellar process results in a wine with a full mouthfeel and great elegance.
