The terroir is distinguished by limestone soils enriched with gravel and a clay-sandy matrix, natural elements that give the wine a remarkable structure and a decisive gustatory precision.
How it is produced
The process begins with destemming and a short cold maceration, followed by soft pressing. After the natural decantation of the must, slow fermentation takes place partly in tonneaux and in large wooden barrels. The wine then matures for five months in contact with the fine lees, a step that enriches its tactile consistency and aromatic complexity before final filtration, resulting in a harmonious and well-defined profile.
