Description
What kind of wine it is
Moscato Canelli Sant’Ilario by Ca’ d’Gal is an aromatic sweet white wine from Piedmont, made from Moscato Bianco grapes, a variety also known as Moscato Reale, grown in the Moscato d’Asti Canelli area. Its bouquet reveals an elegant complexity, with intense notes of yellow peach and apricot enhanced by fresh hints of acacia and sage. On the palate, the natural sweetness is perfectly balanced by lively acidity and a creamy, persistent perlage, making it ideal to pair with mature cheeses or fine pastries.
Where it comes from
The grapes come from the historic Canelli area, specifically from the Brichet and Valdivilla plots. Here, the vines take root in soils composed of white marl and blue clay, situated at an altitude of around 400 metres with a north-east exposure. This specific microclimate, combined with the crucial contribution of old vines, gives the wine vibrant aromas and extraordinary freshness. The classic Guyot training system ensures balanced yields, essential for preserving the precise flavour profile that distinguishes this region.
How it is produced
Production begins with a manual harvest carried out in mid-September, followed by gentle pressing in the presence of dry ice to preserve the primary aromas of the grapes. The must remains in prolonged contact with the lees in stainless steel autoclaves at zero degrees until spring, when a slow, controlled fermentation begins. The process is completed with targeted bottle ageing, which continues until the autumn following the harvest to harmonise and elevate the wine’s structure.
History and Curiosities
Born in Piedmont, Moscato Canelli Sant’Ilario from Ca’ d’Gal encapsulates family tradition. This sweet wine originates from the plots of Valdivilla, where the precious 70-year-old vines are carefully hand-harvested. The process involves gentle pressing with carbonic snow and a period resting on the lees in a pressurised tank. Maturation in the bottle enhances a creamy perlage, capable of balancing the sweetness with lively fruity aromas.

The marriage of tradition and new experiences comes from the stories and memories of my father, specifically a dinner with some friends, the "seigiornisti" by Giacomo Bologna.
During that evening, as always relaxed and friendly, they told their stories, retracing their memories and different harvests. It was at that moment as I listened to them, I suddenly found myself thinking that those memories could become reality again. It was that night that I decided exactly which vineyards could fulfill my dream: the vineyard of Mr. Pierino Valdivilla and Brichet would become the "Vigna Vecchia" from Ca ‘D’ Gal .
From that long ago moment in 1990, the road has been long, intense and full of trials and research, testimonials and confirmations but today, tasting our wines, visiting the winery or by sitting with us at the table in our agritourismo, you will find all these experiences and the understand of our history .
