This Franciacorta Extra Brut by Ca’ del Bosco displays an elegant and powerful character, distinguished by an intense aromatic profile and a full, juicy flavour. The cuvée is created from a meticulous blend of Chardonnay, Pinot Blanc and Pinot Noir, crafted strictly according to the Traditional Method to ensure a fine perlage and a well-defined structure. In the glass, it shows a bright straw-yellow hue, heralding a balanced sip of great finesse. Ideal for accompanying an entire meal, this sparkling wine pairs perfectly with refined starters, dishes based on lean fish and selections of cheeses, enhancing flavours with its vibrant freshness.

Where it comes from

This cuvée originates in the heart of Franciacorta, in Lombardy, where Ca’ del Bosco is based in Erbusco. The base wines come from a fragmented viticultural mosaic, meticulously studied to highlight the maximum expression of the territory. The grapes are sourced from numerous Chardonnay plots, historic parcels of Pinot Blanc and vineyards of Pinot Noir distributed across various renowned municipalities, including Provaglio d’Iseo and Passirano. Careful selection and classification of vines with different ages and exposures ensure the creation of a coherent blend, deep and always true to its Lombard origins.

How it is produced

After manual harvesting and washing of the grapes, pressing takes place in the absence of oxygen. Fermentation occurs in stainless steel tanks at controlled temperature, where the wine rests for seven months before composing the final blend. The prise de mousse using the Traditional Method involves a long ageing on the lees. Disgorgement with a patented process prevents oxidative shock, ensuring excellent longevity and absolute sensory purity.

Ca' del Bosco is the mainstay of the Franciacorta terroir. The Ca' del Bosco wineries were founded in the mid-1960s by Annamaria Clementi Zanella, who bought a modest house of the same name in Erbusco, which was endowed with vineyards and woods. However, her son, Maurizio Zanella, started wine production, enhancing the terroir's characteristics and transforming that small house into one of Italy's most productive wineries. In fact, these cellars are distinguished for producing the famousCa' del Bosco sparkling wine, which is characterised by its elegant yet strong personality given by intense, juicy aromas and fullness of flavour. Today Ca' del Bosco is a well-established business, producing numerous labels, including still wines, both red and white, and Franciacorta for which Xtrawine has reserved a place of honour.
