Ca’ dei Frati Cuvée Extra Brut is a refined sparkling wine made using the Traditional Method in Lombardy, created from a harmonious blend of Turbiana and Chardonnay. The absence of malolactic fermentation ensures a fresh and precise style, enhanced by a fine and continuous perlage. On the nose, clear citrus and floral notes emerge, combined with hints of peach, hay and tobacco. On the palate, it offers a silky and creamy mousse, balanced by lively acidity that leads to a dry sip, enriched by pleasant hints of biscuit and hazelnut.
Where it comes from
The grapes come from lush vineyards cultivated in the Lugana di Sirmione area, near the shores of Lake Garda. This unique lakeside setting ensures a mild and constantly breezy climate, essential for preserving the natural acidity and aromatic purity of the grapes. The calcareous-clay soils, enriched by the presence of silt, give the wine great balance and a solid gustatory structure. The Ca’ dei Frati winery is a historic reference point: as early as 1782, archival documents attest to the estate’s activity, which over time has become a symbol of the region’s high winemaking vocation.
How it is produced
Production begins with careful manual harvesting and direct pressing of the grapes, followed by the first fermentation in stainless steel tanks at a controlled temperature. The prise de mousse takes place strictly according to the Traditional Method, with a secondary fermentation lasting at least twenty-four months on the lees. This long ageing allows the wine to develop unmistakable elegance and enrich itself with complex nuances. After disgorgement, the wine requires a further maturation of four months, ensuring a dry and persistent finish, ideal for accompanying freshwater fish starters or medium-aged cheeses.

It was in 1939 when Felice Dal Cero, son of Domenico, already a winemaker in Montecchia Crosara in Verona, moved in that house, Lugana of Sirmione, sensing immediately the wine-growing area.
After 30 years of work in the vineyard and winery in 1969, his son Peter participated in the creation of Doc started to bottle its first Lugana Casa dei Frati label.
Today, with his wife Santa Rosa cultural heritage has been passed on to children Igino, Gian Franco and Anna Maria who run the company with the same passion and determination.
