Ca dei Frati Cuvée dei Frati Extra Brut Rosé is a Traditional Method sparkling wine that expresses the identity of the Garda region. This rosé is created from a blend of Barbera, Groppello, Marzemino and Sangiovese. Visually, it displays a refined antique pink hue, enhanced by a fine and persistent perlage. On the nose, it reveals a fragrant bouquet where saline notes intertwine with small red fruits, rose petals and delicate hints of brioche. On the palate, it is taut and enveloping, supported by a pronounced mineral freshness that enhances its smoothness and drinking pleasure.
Where does it come from
The grapes come from the vineyards of Lugana di Sirmione, located in the Garda area. The Ca dei Frati winery cultivates its vines in a unique pedoclimatic context, where the plants sink their roots into a composite soil made up of clay, limestone, silt and sand. This particular combination of soil is fundamental in giving the grapes an intense aromatic profile and imparting to the wine that characteristic savoury texture which is its unmistakable stylistic hallmark.
How is it produced
Production begins with manual harvesting and a brief maceration on the skins to achieve the desired rosé shade. Fermentation takes place in stainless steel at a controlled temperature, while the subsequent prise de mousse, essential for the Traditional Method, is achieved through the action of yeasts. The wine undergoes ageing on the lees for twenty-four months, acquiring structure and softness. To preserve its natural acidic verve, malolactic fermentation is not carried out. The Extra Brut dosage ensures a minimal residual sugar content, followed by a further four months of rest before release.

It was in 1939 when Felice Dal Cero, son of Domenico, already a winemaker in Montecchia Crosara in Verona, moved in that house, Lugana of Sirmione, sensing immediately the wine-growing area.
After 30 years of work in the vineyard and winery in 1969, his son Peter participated in the creation of Doc started to bottle its first Lugana Casa dei Frati label.
Today, with his wife Santa Rosa cultural heritage has been passed on to children Igino, Gian Franco and Anna Maria who run the company with the same passion and determination.
