Bruno Paillard presents an Extra Brut Champagne with a dry profile, crafted strictly using the Traditional Method. The blend combines Pinot Noir, Chardonnay and Pinot Meunier, creating a sensory experience of great finesse. In the glass, it shines with a straw gold colour, enlivened by a very fine perlage. The bouquet opens with lively citrus notes, such as lime and grapefruit, evolving towards red fruits, almond and toasted bread. On the palate, the entry is vibrant, revealing a broad yet agile structure, leading the tasting towards a clean and precise finish.
Where does it come from
This wine originates from the renowned Champagne region in France, offering a faithful expression of the terroir. The careful selection of grapes from thirty-five crus allows for the integration of different characters into a consistently coherent style. This approach results in an excellent aromatic balance, capable of blending the freshness typical of Chardonnay with the red fruit nuances of Pinot Noir. Completing the sensory profile, Pinot Meunier adds pleasant notes of candied and exotic fruit to the bouquet.
How is it produced
Production uses exclusively first-press musts. After fermentation, there is a three-year maturation on the lees, essential for imparting depth and toasted notes. Following disgorgement, the Champagne rests for a further five or six months before leaving the cellar. This lengthy wait, combined with a very low dosage, ensures a distinctly lively entry on the palate. The progression reveals elegant hints of blackberry and morello cherry jelly, with subtle nuances of evolving plum and pear.
