Description

What kind of wine it is

N.P.U. Nec Plus Ultra by Bruno Paillard represents the ultimate Champagne, a Traditional Method characterised by a saline and refined profile. This blend harmoniously combines Chardonnay and Pinot Noir, offering the palate a precise structure and a creamy texture of utmost elegance. The low Extra Brut dosage ensures a dry and defined sip, supported by vibrant freshness.

Where it comes from

The grapes are sourced from selected parcels located in the prestigious areas of Oger, Mesnil-sur-Oger, Chouilly, Verzenay, Mailly-Champagne and Bouzy. The skilful combination of these origins within the appellation aims to convey the depth of great historic wines. Resting in the cellars allows the raw material to evolve magnificently, making the prolonged ageing a true expression of time.

How it is produced

Fermentation takes place in small oak barrels, a choice that enriches the aromatic profile without overpowering the varietal notes. Ageing on the lees continues for twelve years, followed by essential maturation after disgorgement. In the glass, it reveals an extremely fine perlage and clear aromas of candied citrus, white flowers, spices and ginger. The sip, distinctly savoury, finishes with a long persistence enriched by elegant balsamic notes.

History and Curiosities

The «Nec Plus Ultra» crowns Bruno Paillard's ambitious dream: to create the absolute pinnacle of Champagne. This prestigious vintage cuvée is produced exclusively in exceptional years such as 2008 and rests for a full 12 years on the lees, followed by at least eighteen months of ageing after disgorgement. This patient wait beautifully evokes the complex aromas of great historic wines. Each bottle, strictly numbered and complete with the disgorgement date, contains a saline and refined liquid masterpiece, celebrating the elegant magic of the passing of time.

The Maison 'Bruno Paillard' was established from the desire of its founder to create a Champagne that was very different from others, very pure.

According to Bruno Paillard, a great Champagne is first and foremost a blend of wines: first and foremost of crus, of grapes, but also vintages always with this desire to capture the quintessence of finesse and elegance that Champagne can offer when it is served lovingly.
