Description
What kind of wine it is
The Champagne Grand Cru Blanc de Noirs Extra Brut by Bruno Paillard expresses the elegance of Pinot Noir, crafted according to the rigorous Traditional Method. This Extra Brut embodies the excellence of Champagne. The base is fermented mainly in steel with a portion matured in barrels, adding complexity to the blend. In the glass, the Champagne displays a fine and persistent perlage that precedes aromas of red rose, Burlat cherry, pink grapefruit and Timut pepper, evolving over time towards notes of kumquat and quince.
Where it comes from
The roots of this wine lie in the prestigious territories of Champagne, combining grapes from the renowned Grand Cru villages of Verzenay, Mailly, Verzy and Bouzy. The vines grow on historic chalky soils, enjoying a predominantly northern exposure that ensures a rigorous expression of Pinot Noir. This distinctive identity translates into a marked sense of freshness, accompanied by a chalky texture. The dry and persistent finish, with a slight bitter note, reflects the authentic soul of the northern crus.
How it is produced
Production uses exclusively the precious first pressing must. Vinification follows the principles of the Traditional Method for the prise de mousse, ensuring profound elegance. A long ageing on the lees of three years gives structure to the wine, which rests for a further six months in the cellar after disgorgement. The result is a chiselled and vibrant profile, where pronounced salinity and delicate fruit merge in a dry finish, capable of enhancing fine gastronomy.
