Where it comes from
The soul of this wine is born in the outstanding territories of Champagne, thanks to a careful selection of grapes grown on the northern slopes of the Montagne de Reims and the hillsides of the Vallée de la Marne. This location gives the Champagne an incredibly taut and linear expression. The chalky soil of the hills imparts a pronounced chalky mineral note to the wine, resulting in an essential profile that makes purity its stylistic hallmark. Meticulous selection work ensures a harmonious balance even in the absence of sugar dosage.
How it is produced
The excellence of Dosage Zéro begins with the selection of the free-run must, a significant portion of which is vinified in small oak barrels to enrich the structure while preserving its freshness. The identity and aromatic complexity of the blend are defined by a significant percentage of precious reserve wines, which provide depth and stylistic continuity to the Champagne. After the prise de mousse, the wine undergoes a long ageing on the lees for over three years. This is followed by a further period of rest after disgorgement, an essential step to perfectly integrate every nuance and deliver a tasting experience with a vibrant, clean and persistent character.

Created in the early Nineties to embody energy and balance, Bruno Paillard's Dosage Zéro was successfully relaunched twenty years later. This refined cuvée with no added sugars stands out for its extraordinary use of reserve wines, which make up more than half of the blend. About half of the must ferments in small oak barrels, then matures on the lees for three to four years. A further rest after disgorgement of at least six months gives this Champagne a rare charm and vibrant elegance.
