Description
What kind of wine it is
Champagne Cuvée 72 Extra Brut by Bruno Paillard is a structured wine with great tension, produced strictly following the Traditional Method. This blend combines Pinot Noir, Chardonnay and Pinot Meunier in a deep and multifaceted sensory profile. In the glass, it appears a bright straw yellow, enlivened by a fine and persistent perlage. The bouquet opens with aromas of citrus and white flowers, enriched by elegant hints of bread crust. On the palate, the attack is fresh and decisive, with notes of redcurrant and a pronounced chalky minerality that leads the sip towards a broad and long-lasting finish.
Where it comes from
Produced in Reims, in the heart of the Champagne region, this wine faithfully reflects the character of its place of origin. The chalky soils impart a profound mineral tension and marked verticality. The absence of dosage enhances the purity of flavour, making this label very versatile at the table. Thanks to its lively freshness and creamy texture, it pairs perfectly with fish dishes, shellfish, molluscs and cheeses. Its dry and balanced profile also makes it ideal as a refined aperitif.
How it is produced
Vinification begins with the careful selection of the first pressings. Part of the must undergoes primary fermentation in oak barrels, acquiring depth and aromatic complexity. The blend is then enriched with the integration of a perpetual reserve, which gives continuity to the Maison's style. Ageing involves a period of thirty-six months on the lees, followed by further rest after disgorgement, for a total of seventy-two months of evolution. This lengthy period bestows the Champagne Cuvée 72 Extra Brut with complex aromas of spices, saffron and cedarwood.
History and Curiosities
Born in Reims, the Cuvée 72 by Bruno Paillard celebrates the art of Champagne. The name honours the 72 months of maturation, a precious wait that bestows extraordinary complexity and an extremely fine perlage. The result of a perpetual reserve and first pressings partially fermented in oak, this elegant zero dosage Champagne releases floral aromas and a profound chalky minerality, offering a fresh, harmonious and enveloping sip.
