Ghemme Oltre il Bosco by Francesco Brigatti is a red wine with a Denominazione di Origine Controllata e Garantita (DOCG) status from Upper Piedmont that faithfully expresses the identity of Ghemme. Vinified using Nebbiolo grapes and fermented in concrete tanks, it is distinguished by its ruby red colour and intense aromas of red fruits, enriched by delicate nuances of violet and spices. On the palate, it reveals a robust tannic structure and vibrant acidity, which ensure long-lasting persistence and remarkable ageing potential. It pairs excellently with traditional cured meats, grilled or stewed meats, and medium to long-matured cheeses.

Where it comes from

This wine is born on the Novara hills, in an area between Suno and Ghemme; the name itself derives from the woodland situated between the two municipalities. The vineyards enjoy a southern exposure and grow on soils of glacial origin, composed of fluvio-alluvial sediments rich in clay and characterised by an acidic pH. The particular nature of the soil allows the Nebbiolo to express freshness and a dense texture. The vines, with an average age of around thirty years, ensure low yields that favour the maximum aromatic concentration of the bunches.

How it is produced

Production begins at the end of October with a rigorous selection of the bunches in the vineyard. Fermentation takes place in concrete tanks, followed by a long maceration on the skins of about sixty days, essential for an optimal extraction of tannins and colour. The wine subsequently matures for twenty-four months in Slavonian oak barrels, before concluding its journey with a further year of refinement in the bottle. To fully appreciate its nuances, it is recommended to serve it at a temperature of 18-20 °C after a short decantation.
