What kind of wine it is
The Bottega Vinai Pinot Grigio Trentino by Cavit is a still white wine that fully expresses the character of Trentino. To the eye, it appears a straw yellow with greenish highlights. The bouquet offers delicate aromas, opening with pronounced floral notes before evolving into ripe hints of pear, yellow-fleshed peach and melon. On the palate, it reveals an elegant structure and a pleasant freshness, supported by a vein of acidity that ensures a harmonious and well-balanced sip.
Where it comes from
The grapes come from vineyards located between Roverè della Luna and the Valle dei Laghi, north of Lake Garda. In this area, the continental alpine climate meets mild sub-Mediterranean influences, ensuring perfect aromatic development. Pinot Grigio, introduced to Trentino at the end of the nineteenth century by the Agricultural Institute of San Michele all’Adige, finds an ideal habitat in this environment. The vines are cultivated with medium-low yields, allowing the aromas to concentrate within the small grey-copper berries to best enhance the characteristics of the terroir.
How it is produced
Production involves white vinification with gentle pressing of whole bunches, aimed at avoiding colour extraction from the skins. The must ferments with selected yeasts at a controlled temperature to preserve maximum aromatic purity. This is followed by ageing in stainless steel tanks for four months before cold bottling. The lively freshness of this wine makes it ideal for accompanying fish, shellfish and sushi, but it also pairs excellently with light starters, vegetarian dishes and soft cheeses.
History and Curiosities
Introduced in Trentino at the end of the nineteenth century by the Agricultural Institute of San Michele all’Adige, Pinot Grigio has found its chosen homeland in this region. This noble bud mutation of Pinot Noir, known in German as Ruländer, is showcased by Bottega Vinai in its most authentic and traditional expression. The small, compact bunches, made up of sweet and juicy grey-coppery grapes, are obtained from low yields to ensure the highest quality, offering the palate a harmonious white wine with a distinctive and refined identity.

The image that best represents Cavit, a large co-operative composed of a large number of small wineries, is that of the vine that produces healthy grapes only if the roots and the other parts of the plant all perform their roles properly.
Created in 1950 to meet the needs of the winegrowers in the area to offer the very best quality and market their wines in a modern way, today Cavit represents over 4,500 winegrowers who are members of 11 cellars and 65% of the wine production in Trentino (around 5,700 ha). Cavit harvests, examines and selects its raw materials from the best produce of the cooperative member cellars, which undergoes strict controls at every stage: from refining to bottling.
Cavit today is one of the major companies in the wine business, operating successfully at national and international level.The headquarters in Ravina, where the production and logistics facilities are also located, house the Wine Cellar, Sparkling Wine Cellar and Wine Shop. Cavit also owns Maso Toresella, used for corporate entertaining, on Lake Toblino.
