Riserva del Governatore Extra Brut is a sparkling wine by Bortolomiol, produced in Veneto from a harmonious blend of Pinot Noir and Chardonnay. An expression of the Indicazione Geografica Tipica, it is distinguished by its dry and bold style, refined using the long Charmat Method. Visually, it presents a straw-yellow colour with a fine and persistent perlage, while the aromatic profile reveals notes of ripe apple and pear, honey, white flowers and a citrus touch. On the palate, it is balanced and harmonious, with a long and elegant finish.
Where it comes from
This wine originates in Veneto, in the heart of Valdobbiadene. The grapes come from selected vineyards, cultivated using the Sylvoz system. The harvest, carried out in early September, allows for a meticulous selection of the fruit intended for the cuvée. The bond with the territory is deep and bears witness to the local dedication to excellence in sparkling wine production.
How it is produced
Production begins with white vinification through soft pressing. After the first fermentation, the second fermentation takes place according to the long Charmat Method, which involves resting on the lees in an autoclave for six months. The wine then undergoes an overall ageing process of at least thirty-six months, maturing partly in oak barrels. This slow evolution gives it a remarkable depth of flavour, making it ideal for accompanying seafood dishes and aged cheeses.
