The commitment of the producer Bonnet Gilmert continues a family story that began in 1910, when Emile Gilmert started marketing his own wines. Today, the company follows organic and sustainable farming practices to preserve the integrity of the soil. This artisanal philosophy results in a limited annual production, aimed at faithfully reflecting the original terroir.
How it is produced
The winemaking process follows the principles of the Traditional Method, including a malolactic fermentation that brings greater softness to the structure. Afterwards, the wine undergoes three years of ageing in the cellars, a crucial period for defining its straw-yellow hue and enriching its sensory profile. Praised by critics and awarded two stars by the Hachette Guide, this Champagne shows excellent ageing potential. It can indeed withstand a storage period of between five and ten years, expressing its utmost elegance when served at a temperature between 6 and 8 °C.
