Where does it come from

This expression originates in the heart of the Côte des Blancs, a renowned area of Champagne famous for giving Chardonnay a pronounced vertical character. The vineyards are located in villages classified as Grand Cru, the highest quality level of the region. The Bonnet Gilmert winery, a family-run business now led by the fifth generation, cultivates its land using organic and sustainable farming methods. With a limited annual production, the company maintains a deep respect for the land and local viticulture.

How is it produced

The production process is based on the Traditional Method, with natural bottle fermentation. The wine undergoes malolactic fermentation, a step that helps define the taste balance while preserving the cuvée’s marked freshness. The cellar ageing phase lasts for at least four years, ensuring a slow and steady evolution. This long rest enriches the aromatic integration and refines the texture of the bubbles, resulting in an elegant glass with a clean structure and a distinctly persistent finish.

Wine growers from one generation to the next, it was in 1910 that Emile Gilmert started selling a few bottles in his name. His son Marcel succeeded him in 1920.

Then Colette Gilmert and Robert Bonnet followed suit in the fifties. They have always produced exceptional Champagnes in strict accordance with the Champagne traditions that they have passed on to us. For some years now, Aude Vauban, fifth generation BONNET family has taken over the family business.
