The origin of this cuvée is rooted in Aÿ, the heart of the Bollinger estate. How it is produced

Production begins with the vinification of the musts in oak barrels, a technique that imparts distinctive aromas and depth. The second fermentation in the bottle follows the strict rules of the Traditional Method, involving patient maturation in the cellar for over seven years on the lees. This lengthy ageing creates a layered bouquet, with fragrances of hawthorn, acacia, linden honey, baked apple and brioche. The restrained dosage of the Extra Brut style ensures a dry and precise sip, fully enhancing the qualities of the blend.
