Where it comes from
This Blanc de Blancs originates from Bassuet, a village located in the Champagne region, where Bolieu meticulously manages its own vineyards. The distinctive feature of this label is the particular chalky and limestone soil, typical of the area, which gives the wine extraordinary gustatory tension and profound minerality. Laurence and Charles Baffard lead the winery with the aim of enhancing the identity of the territory, offering a pure version of Chardonnay that honours the limestone matrix evoked by the very name of the cuvée.
How it is produced
The production process begins with a careful selection of the grapes, which are processed to form the base of the Champagne. The prise de mousse phase takes place following the Traditional Method, with a slow refermentation in the bottle. This is followed by a prolonged ageing on the lees lasting seventy-seven months, an essential step to enrich the aromatic spectrum and ensure a fine and consistent perlage. With disgorgement, the sparkling wine reaches its Brut dosage, displaying lively citrus notes and remarkable persistence on the finish.
