What kind of wine it is
Bocca di Lupo is an organic white wine by Tormaresca, created to enhance the qualities of the Fiano grape in Apulia. To the eye, it displays a pale yellow colour with greenish highlights, revealing an aromatic complexity characterised by notes of white peach, orange blossom, herbal hints, hazelnut and vanilla. On the palate, it is dry, with a fine and mineral texture that ensures a fresh and long-lasting sip.
Where it comes from
The grapes grow on the Bocca di Lupo estate, located in the heart of the Castel del Monte area. The vineyards stretch across a hilly region near Vulture, with roots sinking into calcareous and karst soils. The white and poor nature of these soils limits vegetative vigour, encouraging the development of precise and defined aromatic profiles. This particular geological matrix gives the Fiano a distinct mineral character, making it a true expression of its place of origin.
How it is produced
After destemming and gentle pressing, the must undergoes a natural cold clarification in steel tanks. The alcoholic fermentation, started at a controlled temperature, continues and finishes in French oak barrels. Afterwards, the wine rests on the lees for several months, gaining greater breadth and structure before the final maturation phase, which establishes its gustatory balance.
