Pietrabianca is an organic white wine from Tenuta Bocca di Lupo, a refined Apulian expression from the Antinori family. It is created from a harmonious blend of white grapes, combining the structured elegance of Chardonnay with the vibrant freshness of Fiano. On the palate, it is dry and smooth, offering a savoury sip with excellent persistence. The aromatic profile opens with notes of white peach, citrus and tropical fruit, finely interwoven with delicate hints of vanilla, tea and sweet spices derived from maturation in wood. Where it comes from
This wine is produced in Minervino Murge, within the renowned territory of Castel del Monte, in Apulia. The vineyards are cultivated on a local limestone soil, a characteristic that gives the label its name and imparts a pronounced savouriness to the wine. The area's climate is characterised by hot summers tempered by significant night-time temperature variations. This unique environment ensures balanced ripening of the grapes, allowing the Chardonnay to express structure and volume, while the Fiano retains its natural freshness and gustatory tension.
How it is produced
Vinification begins with gentle pressing of the grapes, followed by natural settling of the must in stainless steel tanks at low temperatures. Subsequently, the Chardonnay undergoes alcoholic and malolactic fermentation in French and Hungarian oak barrels, maturing on its lees for about six months. The Fiano, on the other hand, is vinified exclusively in temperature-controlled stainless steel to preserve its acidic and taut profile. After the careful blending phase, the wine completes its quality journey with an essential bottle ageing of five months, ideal for harmonising contrasts and defining the final balance.
