Pietrabianca Castel del Monte Chardonnay is an organic white wine produced by Tormaresca. Born from the union of Chardonnay and Fiano, it represents an elegant expression of the Castel del Monte denomination. In the glass, it appears straw yellow with greenish highlights. On the nose, it offers a fruity bouquet of white peach, citrus and exotic fruit, combined with hints of magnolia and delicate vanilla notes. On the palate, the entry is smooth, followed by a pleasant savouriness and minerality. The structure supports a persistent finish, balancing freshness with the contribution of the wood.
Where it comes from
This wine originates from the Bocca di Lupo Estate, located in Minervino Murge. The name recalls the local white stone, emphasising the deep connection with the Apulian territory. The vineyards benefit from hot summers tempered by significant temperature variations between day and night. This climate, together with proper canopy management for shading, ensures a balanced ripening of the grapes. The pedoclimatic environment encourages intense aromatic development, carefully preserving the natural freshness and acidity of the bunches.
How it is produced
After destemming and gentle pressing, the must settles at a low temperature. The Chardonnay ferments and matures on the lees in new barrels of French and Hungarian oak, completing malolactic fermentation. The Fiano, on the other hand, ferments in steel to maintain its liveliness. After six months of maturation in wood, the varieties form a harmonious blend, further refined for five months in the bottle. The result is a structured profile, ideal for accompanying white meats, seafood first courses and mature cheeses.
