The forty-year-old vines sink their roots into poor soil, with a cultivable layer of only thirty centimetres resting on the characteristic Campanian chalk. This geological matrix enhances the Champagne, encouraging low yields and imparting a taut and distinct minerality.
How it is produced
Vinification requires meticulous timing. The slow fermentation takes place in barrels, increasing aromatic complexity and maintaining a dry style. The subsequent prise de mousse according to the Traditional Method involves a long ageing on the lees for seventy-eight months. Every action has been adequately thought out. Of course our land is plowed and we also use weed control to limit disease. This vegetation cover avoids herbicides, insecticides and anti-rots. Everything begins with the soil. The fertilization is organic. We feed wildlife which in turn feeds flora and thus the soil is working.
