Champagne Benoit Dehu Initiation Rosé is a Traditional Method wine made from a blend of Pinot Meunier and Pinot Noir. In the glass, it stands out for its refined onion skin pink colour and fine perlage. On the nose, aromas of red fruits blend with mature notes of yeast. On the palate, it is rich and vibrant: the choice of Brut Nature style, with no dosage, offers a dry sip, great freshness and a clean finish. Ideal when served between 6 and 8°C to accompany starters, fish dishes and delicate cheeses.
Where does it come from
This Champagne is produced in Fossoy, where Benoit Dehu leads the family estate, now in its eighth generation. The production is artisanal and limited in quantity, focusing on enhancing the local terroir. In the vineyard, biodynamic principles are applied, respecting nature’s rhythms and using horses to work the soil. To ensure the highest quality, the harvest is carried out in several stages to select only perfectly ripe grapes. This approach aims to preserve the purity of the fruit and the identity of the vineyard.
How is it produced
The winemaking process involves pressing the grapes in small batches. The must ferments and matures for ten months on the lees in oak barrels made from wood sourced from the Fossoy forest. This step gives the cuvée significant structure and a deep aromatic profile. The decision not to filter the wine before bottling preserves its integrity, allowing the terroir to fully express itself and encouraging a natural and steady evolution over time.

Benoit processes a plot of 1.70 hectares of selected Pinot Meunier vineyards using biodynamic and artisanal methods: uses horses, follows the phases of the moon, harvests only in the morning and in five phases to obtain maximum maturity, squeezes the juice from a small press of 2000 kg. From these vineyards is produced a single vintage champagne "Cuvée La Rue des Noyers" that Benoit bottles with its own label.
This wine matures in oak barrels that come from the trees of nearby Fossoy forest. From the same plot Benoit produces a red and white Coteaux Champenois, all three references are composed of 100% of Pinot Meunier. Benoit focused on the project to obtain high quality grapes that can be the basis of his work by intervening as little as possible and following his own inspiration and a desire to better interpret what nature has to offer.
The style of Benoit wines is intense, energetic with a fine minerality and a seductive aroma of white flowers. Although its production is minimal, only 2,400 bottles, its wines are finding the enthusiasm of enthusiasts and place Benoit as a reference point to look at in one of the most dynamic and growing regions in France.
