What kind of wine it is
Alma Non Dosato by Bellavista is a white Franciacorta from Lombardy with a dry and rigorous character, produced according to the principles of the Traditional Method. This blend harmonises Chardonnay and Pinot Noir with a selection of reserve wines that add depth. In the glass, it shines with a bright yellow hue, accompanied by a fine and continuous perlage, while on the palate it stands out for its zero dosage style, vibrant with tension and energy. The bouquet is fresh and delicate, with hints of elderflower, jasmine, citrus fruits and nuances of medicinal herbs such as thyme.
Where it comes from
The grapes are grown in Lombardy, in the heart of Franciacorta. Production begins with a meticulous selection from twenty-five historic vineyards, including outstanding plots such as Brede, Budrio and Casello. The vines, with an average age of thirty years, are trained using Guyot and spur cordon systems to ensure low yields and a faithful expression of the terroir. The temperate climate encourages balanced development of the bunches, supported by constant vineyard monitoring, resulting in a dynamic and well-defined flavour profile.
How it is produced
Following manual harvesting, gentle pressing allows for the extraction of the free-run must. The wine matures in stainless steel tanks and small oak barrels, before refermenting in the bottle as required by the Traditional Method. Ageing on the lees continues for around twenty-six months, including careful manual remuage. Disgorgement takes place without the addition of sugars, thus preserving extraordinary verticality. This long resting period enhances the persistence on the palate, delivering a taut wine enriched with clear balsamic notes and hints of white-fleshed fruit.
