Description
What kind of wine it is
Barbaresco Pajorè by Bel Colle is a still red wine that combines elegance and power, representing an authentic expression of the Piedmontese territory. Made from Nebbiolo grapes, it reveals an ethereal bouquet, enriched with notes of balsamic cherry, spices, and delicate floral nuances. On the palate, it is dry, robust, and austere, supported by a silky tannin and a distinct mineral imprint. Its significant structure and well-balanced acidity provide a long and persistent finish, ideal for pairing with braised red meats and a selection of mature cheeses.
Where it comes from
This wine originates from the renowned Pajorè cru, located in the municipality of Treiso, in the heart of the Barbaresco production area. The vineyards are situated on slopes with excellent southern exposure, at an altitude between 190 and 350 metres. The soils, rich in calcareous marl and clay, give the Nebbiolo grape a distinctive and profound character. In this specific plot, the grapes develop a floral aromatic profile and remarkable finesse, ensuring an elegant structure capable of evolving over time while maintaining a vivid territorial freshness.
How it is produced
Production begins with a manual harvest, during which only bunches that have reached full ripeness are selected. After gentle pressing, fermentation is managed to extract the best varietal texture. The wine then undergoes ageing for eighteen to twenty-four months in Slovenian oak and chestnut barrels. This period in wood supports the aromatic evolution without overpowering the grape's mineral nuances. A further resting period of six months helps to soften the tannins and define the vigorous and harmonious nature of the sip.
