What kind of wine is it
Alta Langa Cuvée Valentina Extra Brut is a Traditional Method sparkling wine produced by Bel Colle. With its golden, luminous appearance, it reveals an intense and complex floral and fruity bouquet. On the palate, it is clear, vertical and powerful, offering a pure sip that ideally accompanies raw seafood, shellfish and refined first courses, thanks to the typical rigour of a genuine Extra Brut sparkling wine.
Where does it come from
The grapes come from the hills of Alta Langa, in the heart of Piedmont, from vineyards planted in the early Nineties. The calcareous-clay soils give the structure marked finesse and deep gustatory tension. Dedicated to Valentina, the producer's wife, this expression reflects a sincere and strong territorial bond, bringing to the glass the authenticity of the historic vineyards from which it originates.
How is it produced
After crushing, the free-run must is extracted without further pressing. The first fermentation takes place partly in steel tanks and partly in French oak barrels. Once the blend is completed, the prise de mousse according to the Traditional Method requires ageing on the lees for at least thirty-six months at a constant temperature. The decision not to carry out dosage ensures a profile free from added sugars at the time of disgorgement.
