Where it comes from
This wine originates from the southern slope of Montalcino, in a well-defined hilly area bordered by the Orcia, Asso and Ombrone rivers. The Sangiovese vines are cultivated using the spurred cordon system on brown-yellowish soils, characterised by a sandy loam texture and a calcareous matrix rich in rounded stones. The strategic geographical position, halfway between the sea and the Apennine range, favours a predominantly dry continental Mediterranean climate. The absence of late frosts and excellent exposure ensure a gradual ripening of the grapes, encouraging the accumulation of aromas and the perfect structural definition of the wine.
How it is produced
The production process begins with a meticulous selection of the grapes, followed by fermentation in steel tanks and skin maceration at a controlled temperature for about ten to twelve days. Malolactic fermentation takes place in barriques, a fundamental step to impart smoothness and balance to the taste. Subsequently, the wine matures for at least two years, with the ageing divided equally between large French oak casks and barriques. This stage imparts remarkable structural complexity, completed by a final period of refinement. The entire winemaking cycle reflects the strict environmental standards adopted by Banfi, officially recognised as a sustainable enterprise.
