Avignonesi Vin Santo di Montepulciano Occhio di Pernice is an extraordinary complex sweet red wine. Made from Sangiovese grapes, it offers the palate a sweet and incredibly deep profile. The bouquet reveals enveloping aromas of Mediterranean herbs, citron, plum, panettone and star anise, culminating in a long walnut finish. Ideally served between 14 and 16 degrees, it pairs excellently with fine cheeses and high-end patisserie, revealing ever-evolving sensory nuances.

Where it comes from

This Vin Santo di Montepulciano originates from the vineyards of Valiano di Montepulciano, in the province of Siena. The vineyard management uses the Guyot training system. At harvest time, the bunches are selected and hand-picked into small crates lined with vine leaves to preserve the integrity of the grapes. The meticulous care in the vineyard ensures the wine has great longevity, guaranteeing exceptional ageing potential.

How it is produced

The production process begins with the drying of the bunches on bamboo mats for six months, encouraging the natural concentration of sugars and aromas. After gentle pressing, the must ferments in small barrels thanks to the use of indigenous yeasts. A subsequent ten-year maturation in wood gives the wine a solid structure and allows it to preserve its aromatic integrity for a very long period of bottle ageing.
