Produced using the Traditional Method, it stands out for its bright garnet pink colour and a fine, persistent perlage. On the nose, it reveals aromas of small red fruits and fragrant notes of brioche. The palate is rich and deep, pairing perfectly with seafood starters, shellfish, fish-based dishes and cheeses.

Where it comes from

This wine originates in France, from the terroirs of Mareuil-sur-Aÿ and Bisseuil, located in the renowned Montagne de Reims within the Champagne region. The winery manages the vineyards by adopting strict biodynamic practices, working in complete harmony with the ecosystem to preserve the soil’s identity. Characterised by extremely limited production, this family label sincerely conveys the unique character of its territory.

How it is produced

The vinification process involves the use of the Traditional Method with spontaneous fermentations carried out by indigenous yeasts, keeping interventions in the cellar to a minimum. The Champagne is created from a careful blend of a base vinified as a white and a portion obtained using the saignée technique, which gives intensity and structure. The Extra Brut dosage ensures a dry, clean and balanced finish, promising an interesting evolution over time.

Antoine is the grandson of Guy Bouvet, who in 1970 founded the small maison Champagne Guy Bouvet in Mareuil-sur-Ay. We are located in the heart of the Mountain of Reims, a stone's throw from Epernay, where calcareous soils rich in chalk and a lot of champenoise tradition of the highest level predominate.

Antoine has clear ideas, despite his young age, and thanks to the grandfather Guy's peasant wisdom, processes his champagnes with great naturalness and thickness. The numbers are very limited, no more than 600 bottles per cuvee.

The heritage of vineyards and limited but of great quality. On average old plants that are managed with great sensitivity applying biodynamic methods. Same philosophy that applies in the cellar, spontaneous fermentation and the least possible intervention. Certainly one of those names that are establishing themselves among the "very young".
