Description
What kind of wine it is
Antoine Bouvet Champagne Le Monts de la Vallee Extra Brut Magnum is a Blanc de Noirs made from Pinot Noir grapes. Produced according to the strict standards of the Traditional Method, it stands out for its straw yellow hue and fine perlage. The bouquet combines fragrant fruity aromas with fresh citrus notes. On the palate, it is well-balanced, supported by a pronounced mineral drive that leads the tasting towards a notably persistent finish.
Where it comes from
The grapes come from Champagne, specifically from the Montagne de Reims, between the villages of Avenay Val d’Or, Bisseuil and Mareuil-sur-Aÿ. The historic vineyards are cultivated using biodynamic practices and low yields per vine. The chalky soils rich in gypsum give the wine its distinct territorial character. This limited production enhances the authentic winemaking vocation of its place of origin.
How it is produced
In the cellar, a philosophy of minimal intervention is followed. Fermentation is spontaneous and occurs solely thanks to the action of indigenous yeasts. After the prise de mousse, a long ageing period allows the structure and stability of the wine to develop over time. The Extra Brut dosage ensures a dry, precise sip that fully respects the original fruit.
History and Curiosities
Born from a family tradition dating back to 1970, this Champagne Blanc de Noirs embodies the Montagne de Reims. The historic Pinot Noir vines, cultivated using biodynamic methods on chalky soils, give rise to a most pure cuvée. Crafted using the traditional method, with spontaneous fermentation and indigenous yeasts, the wine reflects a philosophy of minimal intervention to enhance its minerality and long-lasting finish. Limited to just 600 bottles, this rare excellence in Magnum format is a masterpiece.

Antoine has clear ideas, despite his young age, and thanks to the grandfather Guy's peasant wisdom, processes his champagnes with great naturalness and thickness. The numbers are very limited, no more than 600 bottles per cuvee.
The heritage of vineyards and limited but of great quality. On average old plants that are managed with great sensitivity applying biodynamic methods. Same philosophy that applies in the cellar, spontaneous fermentation and the least possible intervention. Certainly one of those names that are establishing themselves among the "very young".
