Its straw yellow colour, enhanced by greenish highlights, reveals a very fine and persistent perlage. On the nose, it expresses elegant fruity notes combined with hints of bread crust, while on the palate it offers a full, fresh and highly enjoyable sip. Also suitable for those following a vegan diet, it pairs perfectly with white meats and cheeses.
Where it comes from
This Trento originates in the heart of the mountainous landscape of Trentino. The vineyards where the Chardonnay ripens stretch between the Valle dei Laghi and the hills of Trento, areas characterised by a centuries-old winemaking tradition. Vineyard management involves Trentino pergola and Guyot training systems, maintaining balanced yields to maximise grape quality. This Alpine terroir gives the wine a pronounced gustatory tension and extremely clear aromas.
How it is produced
After harvesting, the first fermentation takes place in stainless steel at a controlled temperature. The subsequent prise de mousse occurs in the bottle, strictly following the Traditional Method, with maturation on the lees lasting at least fifteen months. This slow ageing process enriches the wine's aromatic complexity and gives it a solid gustatory balance, making it harmonious and ready to be enjoyed.
